It has truly been an experience. Mother Nature showed herself to be THE BOSS. In some ways, garlic is easy to grow. I have told people that GARLIC WANTS TO GROW. If you leave some bulbs in the ground, over the winter, (by mistake of course), there will be 6 or more sprouts coming up in the following spring. Garlic growing is very labor intensive. A person has to be tolerant of becoming almost overwhelmed by the wonderful, strong fragrance of FRESH GARLIC.

My core offering is Cara-Sel, a salted caramel sauce made in one-gallon batches using just five simple ingredients. I caramelize the sugar slowly to a deep copper stage, which develops a more complex, deeply toasted flavor, then finish, bottle, date, and label each batch by hand.
That same caramel-making process forms the foundation for all of my work, appearing in several formats including jarred sauce, baked goods, and small snack offerings. For this event I create special garlic & caramel-based baked treats: Roasted Garlic Caramel Pecan Pretzel Blondies and Black Garlic Caramel Brownies. These unique offerings accompany my GF Caramel Sesame Crispy Treats as well as my Snack Fix, a savory snack mix made with Rockerbox Garlic Dust, and Crunch Mix, a granola-like topping. All items are made entirely by my own two hands in small batches.

The word, “Naga” is an acronym for (NA)tural (G)rain (A)alchemy, or “Naga”. It is the magic of changing something simple into something special. Naga’s “stuffed” and “flatbreads are rustic, filling and delicious! Think garlic knots with greens, spinach feta, blueberry and ricotta cheese, caramelized onions with fresh mozzarella, and more! Naga’s savory whole grain Artisan breads and pizza are baked in a wood-fired oven for folks who care about good food. In addition to the bakery, Naga is also a small batch gristmill producing freshly milled, Artisan flour made from grains sourced from small family farmers in the region. Naga is consistently inconsistent, specializing in wholesome, locally sourced and delicious foods. We can be found at regional farmers’ markets and festivals statewide and throughout New England.

Rockerbox specializes in pure & potent garlic and onion powders.
We make 5 kinds of garlic powders and 5 kinds of unique onion powders. We also will be selling our four classic varieties of Pickled Garlic, as well as black garlic puree and handmade wearable garlic flower “crowns”.
My grandparents were proud garlic farmers in the Finger Lakes region of NY. I was named Raema after my great-grandmother and grew up eating their hardneck garlic — a flavor that’s been part of me since the beginning. In 2011, I realized I expected more from garlic powder than the granulated generic stuff available at supermarkets. I expected garlic powder to be at least as flavorful as my grandparents’ hardneck garlic – that intense, borderline spicy pungency that store-bought garlic powders lack entirely. I looked everywhere, and it became clear that real garlic powder was nearly impossible to come by… so I started making my own!

From a brine well more than 280 feet underground, comes this clean and crisp flake salt loaded with healthy minerals, just waiting to dress up your food. The brine originates in the deep waters flowing beneath Syracuse, dissolving salt along the way just as it has for thousands of years.
In order to produce this beautiful salt, we evaporate the water slowly, leaving behind a pure, snow white flake. The salt is sifted to a uniform size and hand packed by a father daughter team based in Syracuse, NY.
Once dry, we infuse our salt with various spices.

We are a family owned and operated company in Watervliet, New York, just outside of Albany. We handcraft all of our products using, as much as possible, local ingredients. We do 8 farmers’ markets in the warm weather in the Albany area as well as various festivals across 5 states all year long. We are in our 19th year of business.
UNIQUELY LOCAL. The Mohawk Valley’s climate and soils are ideal for growing garlic and herbs, which is why we have so many local producers. Ours is a non-profit agricultural festival; we aim to provide information to area would-be farmers and gardeners pertaining to the benefits of growing these crops.
